Xi'an (Chinese: 西安; pinyin: Xī'ān)[1][2] is the capital of Shaanxi province,[3] and a sub-provincial city in the People's Republic of China.[4] One of the oldest cities in China, with more than 3,100 years of history, the city was known as Chang'an before the Ming dynasty.[1] Xi'an is one of the Four Great Ancient Capitals of China, having held the position under several of the most important dynasties in Chinese history,[5] including Zhou,Qin, Han, Sui, and Tang.[5] Xi'an is the starting point of the Silk Road and home to the Terracotta Army of Emperor Qin Shi Huang.[1]Shanghai It is a global financial center. During the Spring and Autumn period, Shanghai belonged to the Kingdom of Wu, which was conquered by the Kingdom of Yue, which in turn was conquered by the Kingdom of Chu. The Chinese-held old city of Shanghai fell to the rebels of the Small Swords Society in 1853 but was recovered by the Qingin February 1855.[29] In 1854, the Shanghai Municipal Council was created to manage the foreign settlements. Between 1860–1862, the Taiping rebels twice attacked Shanghai and destroyed the city's eastern and southern suburbs, but failed to take the city.[30] In 1863, the British settlement to the south of Suzhou Creek (northern Huangpu District) and the American settlement to the north (southern Hongkou District) joined in order to form the Shanghai International Settlement. The French opted out of the Shanghai Municipal Council and maintained its own concession to the south and southwest.YunnanThe special dish of Kunming is guò qiáo mĭxiàn, a boiling, chicken soup with rice noodles under a very thin layer of oil. Raw meat and vegetables are added by the consumer to ensure the ingredients are fresh and the ingredients will be cooked in the hot soup since the cut of the raw meat and vegetables are extremely thin. The legend behind "crossing bridge noodles" involves a student studying for the imperial exam (which was given once per year). He went to study on an island a short way from his wife and village. Every day his wife would bring him food, but because of the distance (she had to cross a bridge) the food would get cold. The student's wife figured out that by layering the broth with oil, she could keep the food hot.
