关于诸城市市区家庭厨房肉类食品处理行为的调查摘要：肉类食品是我国大部分家庭的餐桌上最常见的副食品之一，其作为微生物致病菌的最主要载体，食品安全问题同样也会导致很多食源性疾病的产生，因此研究家庭厨房肉类食品处理行为的卫生程度尤为重要。本论文采用随机抽样法对诸城市市区居民开展线下问卷调查，对调查结果进行数据统计分析。研究发现居民家庭厨房对肉类食品处理行为存在严重安全风险，低收入居民是行为风险控制的关键人群，清洁与运输环节是行为风险控制的关键环节。应从清洁厨房用具杜绝交叉污染、采用正确运输、烹调、隔离方式和妥善储存肉类剩食三个方面加强肉类卫生处理宣传工作,以提高家庭厨房肉类食品处理行为的卫生程度。关键词：肉类食品 卫生程度 处理行为A survey on the consumption of meat in Zhucheng CityAbstract: Meat food is one of the most common non-staple food in most families in China. As the main carrier of microbial pathogens, food safety problems will also lead to many food borne diseases. Therefore, it is particularly important to study the sanitary degree of meat processing behavior in family kitchens. In this paper, the random sampling method is used to carry out offline questionnaire survey for urban residents of Zhucheng City, and the data of the survey results are statistically analyzed. It is found that there is a serious safety risk in the behavior of meat processing in the family kitchen of residents, low-income residents are the key population of behavior risk control, and cleaning and transportation are the key links of behavior risk control. In order to improve the hygienic level of meat processing behavior in family kitchen, three aspects should be strengthened: cleaning kitchen utensils, eliminating cross contamination, adopting correct transportation, cooking, isolation and properly storing meat leftovers.
