I摘 要为了保障食品的质量能够满足人们的食用要求,食品中经常加入人工合成的食品抗氧化剂。食品抗氧化剂及其辐照产物对人体具有一定的毒性和副作用,因此对其进行跟踪检测是非常有必要的。现如今随着科学技术的进步,并且食品添加剂威胁人们健康的事件也经常发生,人们逐渐的开始研究针对性强,能够特异性检测某种物质的技术,以此来降低用来其他干扰物质对检测结果的影响。分子印迹技术是近年来逐渐兴起的一种的微量分离分析方法,具有高效快速,特异性强,精确度高等特点。因此,分子印迹技术在食品抗氧化剂方面应用广泛。关键词:分子印迹技术;分子印迹传感器;食品抗氧化剂Abstract In order to ensure the quality of food, artificial antioxidants are often added to food.
